Healthy Vegetarian Ceviche

Spring has sprung and summer is on its way! Whether looking for a great side dish for a BBQ or a simple light lunch, this healthy vegetarian ceviche is just the answer. It’s fresh, it’s light, it’s low calorie and it’s absolutely delicious!

 

Ingredients:

 

  • 4 Roma Tomatoes (diced)
  • 2 Avocados (diced)
  • 1 Jicama (diced)
  • 1/2 English Cucumber (sliced and quartered)
  • 1 Bunch of Radishes (sliced and quartered)
  • 1 Jalapeno (deveined and seeded for a mild heat, leave in for more of a punch)
  • 2 Stems Green Onion (sliced)
  • 1 Handful Cilantro (chopped)
  • 2 Limes (juiced)
  • Salt (to taste)
  • Pepper (to taste)

 

Mix all ingredients. Enjoy!
