Spring has sprung and summer is on its way! Whether looking for a great side dish for a BBQ or a simple light lunch, this healthy vegetarian ceviche is just the answer. It’s fresh, it’s light, it’s low calorie and it’s absolutely delicious!
Ingredients:
- 4 Roma Tomatoes (diced)
- 2 Avocados (diced)
- 1 Jicama (diced)
- 1/2 English Cucumber (sliced and quartered)
- 1 Bunch of Radishes (sliced and quartered)
- 1 Jalapeno (deveined and seeded for a mild heat, leave in for more of a punch)
- 2 Stems Green Onion (sliced)
- 1 Handful Cilantro (chopped)
- 2 Limes (juiced)
- Salt (to taste)
- Pepper (to taste)
Mix all ingredients. Enjoy!
